Acetaldehyde dehydrogenase is a group of enzymes found in the human body with a CAS number (9028-91-5). They constitute only the greater part of the enzymes from the dehydrogenase group, which are encoded by genes such as: ALDH1A1, ALDH2 and ALDH5. However, the presence of this enzyme depending on the race is different, and so people of the Northeast or people with blue eyes and blonde hair may show a mutation in the gene for this enzyme, which makes its effectiveness much more reduced.
